BioRESTART, academic spin-off of the University of Pavia, produces functional ingredients (phytochemicals, plant extracts) from fruit and vegetable waste and by-products for the food industry (functional foods, food supplements, fortified foods) and for agrochemicals companies (phytosanitary products), using an innovative and sustainable extraction process, based on a modified bacterial strain overproducing plant cell wall degradative enzymes, which increase the release of bioactive compounds. Compared to the traditional extraction systems requiring TIME, MONEY and TOXIC SOLVENTS, our system is FAST, CHEAP, CLEAN and …EFFECTIVE, allowing to obtain high quality products at low production cost.
